Chinese New Year - Steam Fish蒸鱼

Whole fish is a dish that must in the menu for Chinese family during Chinese New Year. Because Chinese believes that a fish served whole is a symbol of prosperity. And there is a Chinese adage 'nian nian you yu', which translates as 'may you have abundance every year'. It also sounds like the phrase 'every year have fish'. So, there's always a bit of fish left at the end of the meal to ensure the diners will have an excess of fortune in the coming year.

Steam is the most common method for Chinese cooking fish. This is a simple steam fish recipe for you to enjoy this Chinese New Year.

Steam Fish Recipes:

Ingredients:
  • 1 whole fish (approximate 500 – 600g, clean the fish - remove scales, guts, gills, etc.)

  • 2 black Chinese mushrooms, shredded

  • 1 tomato, cut into thin slices

  • 2 – 3 leaves of celery, cut into 2 inches long

  • 3cm piece ginger, finely shredded

  • salt and pepper

  • 2 tablespoons shaoxing wine or rice wine

  • 1 ½ tablespoons of sesame oil

Some coriander, cut into 2 inches

Methods:
  1. Make two cuts on each side of the fish. Rub lightly with salt and pepper.
  2. Arrange celery on the bottom of the steaming bowl.
  3. Place the fish on top of the vegetables.
  4. Scatter tomato, mushroom and ginger on and around the fish.
  5. Drizzle shaoxing or rice wine on top of the fish.
  6. Steam for 15-20 minutes or until the fish flakes easily.
  7. Pour sesame oil over the fish immediately.
  8. Garnish with coriander and serve with rice hot.
