Fried rice(炒饭) is a popular Asian cuisine. It is made from rice stir fried in a wok with other ingredients such as eggs, vegetables and some kinds of meat. Fried rice is not one single dish. The use of leftover rice and other leftover ingredients is common when cooked at home. It is more of a way of combining leftover rice with leftover anything else and turning it into a one-dish meal. Fried rice can be a quick and easy meal if you are hungry and want to cook something to eat. Because you can just grab any ingredients you can find in your fridge and start cooking.

Fried Rice Recipe:

This is a very simple recipe. I use the most common ingredients that easily to get at anyone home. You can add in more ingredients according to your preference.

Ingredients:

  • 2 cups cold, cooked long grain rice

  • 3 sausages, diced (any flavour, chicken, pork or beef, even Chinese sausage)

  • 2 eggs

  • 2 tbsp garlic – finely chopped

  • 1 shallot - sliced

  • 2 tbsp cooking oil

  • Sugar to taste

  • Salt & pepper to taste

  • Some coriander

Methods:

  • Heat the oil in a wok with high heat.
  • Add sausages, garlic, shallot into wok and stirring constantly till all ingredients turn lightly golden brown.
  • Reduce heat to medium and add in rice, stir-fry for about 3 minutes. Crumbling any big sticky blocks of rice with stirring spoon or spatula, ensure all rice separated well.
  • Push everything in wok aside. Break eggs into wok, stirring, until the eggs are lightly scrambled and still moist.
  • Stir and incorporate the eggs into the rice, seasoning with sugar, salt and pepper.
  • Keep stirring for few minutes till rice are well separated and dry.
  • Garnish with coriander leaves and serve.
