Carrot Cake -  Mother's Day Special

"Mother carries the child in her womb for nine months and in her heart for the rest of her life". These few words have show that how much our mother loves us.

Mother's Day is an occasion when individuals express their love and respect to mother. It's time to pamper mother for all she has done for us over the years. The modern Mother's Day is celebrated on various days in many parts of the world, most commonly in May, though also in March.

It doesn’t matter when you celebrate mother’s day and which part of the world you come from, you can always show your love to your mother. Bake a
carrot cake for mother and express your thankfulness to her.

Carrot Cake Recipe:

Ingredients:

Makings:
  • 240 gram carrots (grated)
  • 60 gram walnuts (toasted, cooled and chopped)
  • 240 gram self raising flour
  • 1/4 teaspoon cinnamon powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 210 gram castor sugar
  • 180 ml cooking oil

Ø  Preheat oven to 175° C.

Ø  Grease and flour a baking pan.

Ø  Sift the flour. Add baking soda, baking powder, cinnamon powder and salt. Mix well with the flour.

Ø  In a large bowl, beat together eggs, oil and sugar.

Ø  Mix in flour mixture slowly. Stir in carrots and walnuts.

Ø  Pour into the greased baking pan.

Ø  Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the centre of the cake and comes out clean.

Ø  Let cool before applying frosting. (Optional)

Ø  Frost with cream cheese frosting or glaze as desired. (Optional)
