SnowSkin Mooncake 冰皮月饼

SnowSkin Mooncake Recipe: (3 mini size)

Ingredients:

• 50g koh fun (fried glutinous rice flour)
• 15g shortening
• 50g cold water
• 75g icing sugar
• ½ Tbsp. fresh milk
• 70g lotus paste (mix with 15g melon seeds), can be bought from baking supply store

Tools:

• Mooncake mould.

Method:

• Sift koh fun and icing sugar into a mixing bowl.
• Add shortening and milk, rubbing until it resembles coarse crumbs.
• Gradually stir in cold water till a soft dough forms. Do not over mix.
• Rest the dough for at least 30 minutes.
• Divide dough into small portion each 20g. (Or according to the size of your mooncake mould.)
• Weigh about 25g of lotus paste and roll into balls. (Or according to the size of your mooncake mould.)
• Sprinkle some rice flour onto a clean surface, roll the dough flat.
• Place the lotus paste in the centre of the dough, wrap and shape it into ball shape.
• Dust the mooncake mould with flour, tap off any excess.
• Press dough balls into mooncake mould and then knock it out.
• Chill in refrigerator before serving.
