Pineapple Fried Rice - Popular Thai food

Pineapple fried rice is a typical Thai dish and it comes from the south of Thailand. It is the most popular Thai food that known by everyone. It always served in a hollowed-out half of pineapple if you order this dish in a Thai restaurant.

Sweet and tangy taste of pineapple combined with the aroma of fried rice and other ingredients, pineapple fried rice is just mouth-watering and utterly appetizing.

Thai food - Pineapple fried rice

Pineapple Fried Rice: (serves 6)

Ingredients:

  • 1 cup pineapple chunks
  • 3 cups cooked rice (keep in fridge overnight or for few hours)
  • 1 piece chicken fillets (cut into small cubes)
  • 10 small shrimps (remove shell, wash and clean)
  • ¼ cup raisins
  • ¼ cup roasted cashews
  • 1 small onion (sliced)
  • 2 cloves of garlic (chopped)
  • 3 tablespoon vegetable oil
  • 1 tablespoon curry powder
  • 2 tablespoon of fish sauce
  • 2 tablespoon of soy sauce
  • Salt and pepper to taste
  • ½ tablespoon coriander (chopped)

Cooking methods:

  • Heat vegetable oil in a wok or skillet.
  • Add in onions and garlic, stir-fry until lightly brown and fragrant.
  • Add chicken cubes, shrimps and pineapple, continue stir-fry until chicken colour change and slightly cook.
  • Add curry powder, fish sauce, soy sauce and stir until finely mixed.
  • Add in rice, stir-fry and toss all the time over high heat.  Do not stop. Make sure break up all the lumps and most moisture gone.
  • Check seasoning, salt and pepper to taste if necessary.
  • Add raisins and cashews, stir and mixed.
  • Dish up and sprinkle chopped coriander on top.
  • Enjoy while it still hot.
